A very special kebab from Gaziantep

Since the time I have been in Turkey I very rarely indulge in kebabs simply because they tend to be too heavy and so delicious that once you start eating you really can’t stop. A few days ago I decided to indulge in a kebab I have only tasted before but have never ordered it for myself as once again, it’s heavy!

Ali Nazik is a kebab that originates from the eastern city of Gaziantep. This is one place that is super famous for food especially meat. In Turkey typically when one talks of kebab it’s not just the meat, but also the accompaniments that make up the dish on the whole. What makes Ali Nazik so special is the aubergine puree that it sits on.

Typically there are cubes of beefs simply grilled that sit delicately on this creamy soft aubergine mash. This is make from roasting aubergine, chopping it really fine and then adding grated garlic and what is called susme yogurt here. Susme yogurt is just extremely thick and creamy yogurt. You can achieve the same consistency by hanging the yogurt. Then they heat up butter and pour it over the dish. Typically it is served with grilled tomatoes and peppers and pita bread to mop it up.
